Xinjiang Lamb Skewers (Dry Rub Version)

Intro
Xinjiang lamb skewers are one of the most iconic Chinese BBQ dishes from Xinjiang in Northwest China, where cumin takes center stage. Traditionally, small cubes of lamb are threaded onto skewers with a touch of lamb fat to keep the meat juicy.
Pairing Suggestions: noodles, flatbread
Ingredients
200g Lamb
*For the most authentic experience, get a mix of fatty and lean bits of lamb
2 tsp EatLa Xinjiang Lamb Rub
Instructions
STEP 1 - Cut lamb into 2cm cubes
STEP 2 - Put the meat into a bowl, add 1 tablespoon of Xinjiang Lamb Rub and mix until all pieces are evenly coated. Let marinate for at least 15-20 minutes before grilling.
STEP 3 - Thread the marinated meat tightly onto skewers.
STEP 4 - Grill the lamb skewers, flipping frequently, until the meat is dark brown on all sides and cooked through.
